On September 12, 2025, in the heart of Lagos, Nigeria’s culinary star Hilda Baci once again etched her name into history. With fire blazing beneath a six-metre-wide steel cauldron, she cooked what has been described as the largest pot of jollof rice ever attempted—an extraordinary blend of ambition, cultural pride, and community spirit.

This was no ordinary meal. It was a feat of logistics, perseverance, and vision. Into that massive pot went:

  • Over 4,000 kilograms of basmati rice

  • 500 cartons of tomato concentrate

  • 750 kilograms of oil

  • 600 kilograms of onions

In total, more than five tonnes of ingredients were carefully stirred into one iconic West African dish. Originally planned with 250 bags of rice, Hilda adjusted to 200 bags after realizing that the pot and crane could bear no more than 20,000 kilograms. The sight of this cauldron, simmering with rich red jollof, was as much a symbol of heritage as it was of sustenance.
